Vixmom, what a story! I'm glad you received good care. If you can stand it, try coconut water. It has the electrolytes, without the sugar in Gatorade. It's vile, but with time you'll get used to it.  The Vita-Coca in the white box that says "pressed" is much tastier than the regular. That can help replenish the electrolytes, which plain water can't do. An M.D. friend told me that.

I love corned beef so much that I'd eat a pile of it by itself. But when it's on the menu as corned beef HASH, that word should be taken as more than a "suggestion".

And hard overcooked eggs? Even worse, in my own pie hole's opinion.

The cans of Hormel (or Libby, that also seems like a good one) corned beef hash are a guilty pleasure here. I grew up on that and the roast beef hash - not as an everyday thing, but we always liked them now and then.

We recently tried a can of the roast beef hash for the first time in years, and I didn't find that one so tasty now. But the corned beef, yeah man, bring it on. We don't just heat it. We take a little extra time frying it up and getting it slightly crispy, for better texture and flavor. And yes, those egg yolks had better be runny. (Agree about runny whites. Can't stand that.)

The first and finest corned beef hash I ever had at a restaurant (excluding diner type places) was at the Carnegie Deli (may it R.I.P.) in NYC when my company had just moved to the east coast. I already knew the Carnegie from earlier visits, but the others didn't, and a few of us ordered the hash one evening for dinner. It was incredible. Everything about it was perfect. The couple of times I've taken the trouble to make some myself, my memories of that meal are the goal.

At the lower end of the scale, I ordered it for breakfast at a diner here a few years back, and was disappointed to find it was JUST the canned variety in spite of being described as a "specialty" or some such. And of course it wasn't lovingly crisped in a skillet like we do at home. It might as well have just been popped into the microwave for a quick heating.

I love the canned stuff, like I said, but it's a whole different thing from a real homemade corned beef hash with, you know, real corned beef. Restaurants should state it like it is, either way, and I'll be happy.
